Healthy Chicken Quesadillas

Ingredients:
Olive oil cooking spray
1 La Tortilla Factory whole wheat tortilla (8.5 inches) (or other brand without hydrogenated oils and found in refrigerated section)
1/4 cup low-fat white cheddar or pepper jack cheese
3 ounces cooked all-white chicken meat, shredded
1/4 cup Birdseye frozen pepper stirfry
1/4 cup shredded romaine or green/red leaf lettuce
1/4 cup diced tomatoes
3 tablespoons salsa
3 tablespoons reduced-fat sour cream

Directions
1. Spray nonstick frying pan lightly with cooking spray and set over medium heat. Add tortilla.
2. Sprinkle cheese on tortilla.
3. On half of tortilla, add chicken and pepper stirfry. After cheese has melted, fold in half and let outside get crispy.
4. Remove from pan and put on plate. Open tortilla carefully and add salsa, tomatoes, and shredded lettuce.
5. Fold tortilla in half again and cut into quarters. Serve with sour cream on the side.
