12 Healthy & Budget-Friendly Meals
I found this link today and absolutely loved the recipes (except the pork one; I don't recommend eating pork, but you could always replace the pork with chicken). As always, EatingWell.com has come up with these great entrees that cost less than $3 per serving. Better than a fast-food value meal. The pictures will have you drooling!
I'm definitely going to try some of these out:
Couscous, Lentil, and Arugula Salad with Garlic-Dijon Vinaigrette (great light salad to start with)
Farrotto with Artichokes (I've never had or even heard of farrotto, but the recipe says it's like risotto)
Greek Orzo Stuffed Peppers (they had me with the picture!)
Turkish Pasta with Bison Sauce (I had a bison burger once and it was pretty good)
Barbecue Portobello Quesadillas (I love quesadillas; so easy and versatile)
